Seafood Courgette Pasta

Im not the best cook, not great at measuring or timing, Im more a common sense ‘that looks right’ kinda person. But this is still pretty straight forward.

A very tasty recipe that once the cashew nuts are soaked took me no more than 10 minutes to make.

Simple, healthy and tasty – cant ask for more :)

2 handfuls mixed seafood (I bought a frozen selection)
1 courgette
handful green beans

For the sauce
100g cashew nuts
handful basil
handful parsley
juice of half a lemon
1 clove garlic
salt and pepper

1) Soak the cashew nuts overnight
2) Add the ingredients for the sauce to a blender and blitz until smooth
3) Meanwhile cook the seafood mixture
4) Add in the broccoli and green beans
5) Using a vegetti create noodles with the courgette
6) Cook for a few minutes
7) Add the sauce and cook a few minutes more
